The story:

A Slice of Paris Memory

When we landed in Paris in June 2024 for a two-night cocktail popup at Bar MishMish, we didn’t expect what came next. The nights went wild, the crowd spilled into the streets, videos started circulating, and within hours our drinks became the talk of the city. By the next morning, we were being asked to stay, for The Fête de la Musique, for the street parties, and for Paris Fashion Week.

There was just one problem, we had completely run out of cocktails.
So we did what we always do when pushed against the wall, we created something new.

We jumped into an Uber, typed “kombucha producer Paris” into the search bar, and followed a lead to the outskirts of the city. After knocking on the gate of a random warehouse, a man appeared. Twenty minutes later, we were walking away with 50 liters of raw kombucha in the backseat.

That’s where the real fun began.

We searched “mezcal import Paris”, found three importers, and decided to visit all of them. We took a bottle from each, knowing we’d blend their personalities into one drink. For the citrus backbone, we wanted something beyond lemons and limes, something Parisian yet global. We landed on yuzu liqueur and orange liqueur. To give it an edge, we infused the kombucha with hibiscus and calamansi, a small citrus fruit from the Philippines, somewhere between a kumquat and a mandarin, bright, tart, and floral.

We mixed the cocktails minutes before the events, filled them into 10-liter tanks with taps, and the party started. No overthinking, no rehearsals, just smoke, flowers, and citrus flowing through the streets of Paris.

The rest is history. The recipe came back with us to Copenhagen, bottled as a memory of those nights, loud, spontaneous, and unforgettable.
